Rogan Josh

Rogan josh is an aromatic lamb curry that is believed to be of Persian origin, although today it is more closely associated with the Kashmir region of India. The stew is characterized by tender meat and a thick, fiery red sauce coming from deseeded Kashmiri chillies.

Lamb pieces are typically stewed in a gravy made with browned onions, garlic, yogurt, ginger, and aromatic herbs and spices. The name of the dish is derived from two words: rogan, meaning clarified butter or oil, and josh, referring to passion or heat.

Rogan josh is usually accompanied by plain or spiced basmati rice and Indian flatbreads such as naan on the side. The dish is also popular in the United Kingdom since the 1950s, when Indian cuisine was brought over to the country.

How to make Shahi Rogan Josh
Step 1

Shahi Rogan Josh is a delicious Kashmiri recipe made with a blend of spices. This slow cooked meat delicacy can be prepared with some easily available ingredients in your kitchen. All you need is some time to cook this heavenly delight. Soak the veggies in lukewarm water with a pinch of salt and then rinse them in cold water.

Take a clean chopping board and finely chop the green chilies, onions and tomatoes and keep them aside in a separate bowl. To reduce the cooking time of this dish, par boil the mutton or soak it in lukewarm water with a pinch of salt and turmeric. This removes impurities from the meat. Then wash it with normal water.

Step 3

Mince the mutton and keep it in another bowl. Also, take a small bowl of water and soak the saffron. To accentuate the taste of this dish, make a your own spice mix with turmeric powder, cumin seeds, coriander seeds, ginger, garlic, salt and red chilies together. To blend these spices well, add water and make a thick paste.

Place a deep pan on medium heat and put some ghee. Add the chopped onions, green chilies and tomatoes and fry them till the ghee starts to separate. Then add the paste and minced mutton (keema) and stir well. Simmer the mutton for a few minutes.

Step 5

Now, beat the curd thoroughly using a beater or churner until it becomes smooth in texture. Add this curd and a cup of water into the pan and stir well. Cook the mutton till it becomes tender and the gravy gets thick.

Step 6

Once cooked, add garam masala, soaked saffron and cashew nuts to the mutton gravy. Stir again. Cover the pan and let the gravy and mutton cook for few minutes. Shahi Rogan Josh is now ready to be served hot. Garnish with lime wedge, green chilies and coriander leaves.
